Cabbage Slaw

Tacos are a staple food in my life and I eat them at least once a week if not more depending on when the avos are ripe! I always prioritize a healthy side of veggies with any meal, and this quick cabbage slaw is a great tasty way to add nutrition, crunch, and flavor to your taco meal. Depending on the filling of the tacos, this cabbage slaw will either go in the taco, or on the side. The following day I often have a taco salad and this slaw makes up the base. One of the brilliant things about tacos is their versatility. Let me know how you eat your tacos!

Ingredients:

  • Shredded Cabbage (green or red), 2-3 cups

  • Shredded Carrot, 1-2

  • Green onion or shallot, 1-2

  • Cilantro, handful

  • Jalapeno, 1 (optional)

  • Olive Oil, 1-2 Tbsp

  • Rice Vinegar, 2-4 Tbsp (twice as much as olive oil)

  • Salt and Pepper to taste

Directions:

Add olive oil, vinegar, salt, pepper, green onion/shallot, and diced jalapeno in a bowl and whisk (I add double the vinegar as olive oil). Add shredded cabbage and carrot and mix veggies into dressing. Cover and place in the fridge while you prep your tacos! Serve on top or on the side of your tacos. Easy, quick, delicious!
